Impossible? I think not!







Hi! I'm sorry I've been MIA this week and haven't visited anyone or posted here, I've had a killer migraine that I just couldn't get rid of, and then got a tummy bug on top of that, so things have been pretty miserable for me. Now though, I'm feeling better, John will be home soon, and I have baked a pie for us all to celebrate with (any excuse for pie or cake right?!) lol. This pie is a recipe handed down to me from my Grandmother, it's called Impossible Pie. The reason it's called Impossible Pie is because it's impossible to go wrong with it! So please, come in and make yourself at home while I pop the kettle on..... now my sweetie's, how big a slice would you like? Cream too? Duh, what a stupid question! Of course we're going to have cream........just don't tell my hips I said that.

Impossible Pie...

1/2 cup plain flour
125g (1 stick) softened butter
2 cups milk
1 cup sugar
2 teaspoons vanilla
1 cup coconut
4 eggs

Beat all ingredients together and pour into a greased baking dish. Bake @ 180c (350f) for 1 hour or until golden brown. Serve warm or cold, with cream, ice-cream, or just on it's own!

Oh my Amanda, I was afraid it might have been a migraine.....and then a belly bug on top of that...you poor thing. I can't imagine being without my Hubby when I get a migraine. Glad he will be home soon.

I am so sorry to hear that you have been under the weather! This recipe sounds so yummy! My Grandma used to make something similar but it had shaved coconut in it! YUMMM!! I will have to try it! It is good to visit you again!

I am sorry that you felt ill..I also suffer from migraines..sometimes caused from NOT enough sleep..mostly barometric pressure ..have you had restless nights without your dear H...I know he was in China on bs.
(I take imitrex 50mg. for my migraines..stops it in it's beginning stage)

I used to make this recipe YEARS ago, but i believe we used bisquick in it...its been so long i cant remember. Now Im annoyed im on a strict diet at the moment, boy could I go for that! By the way, I just LOVE your blog...makes me want to move to Queensland right now!!!
