Deciding that banana and walnut muffins were my best bet for today, I donned my apron, made a coffee and got down to baking 2 dozen of these little delights which I thought I'd share with you today as you make your way around blogland.
Banana & Walnut Muffins...
3 large bananas (over ripe)
3/4 cup white sugar
1 egg
1 teaspoon bicarb soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
125g crumbled walnuts
1 1/2 cups plain flour
1/2 cup melted butter
Mash bananas, add sugar and lightly beaten egg. Add melted butter. Sift all dry ingredients together, then toss walnuts through the dry mix (this will stop the nuts from sinking to the bottom of the muffins). Add dry mix to wet mix and stir with a spoon until just combined (don't over mix). Spoon into greased muffin pan and bake @ 180c (350F) for 20 mins or until cooked and golden brown. This makes 12 muffins or one cake. Freezes beautifully. Delicious served with or without icing (we had it with out today trying to be good! Ha!) Enjoy!

I know that J would have loved to have had tea at your house. Banana bread and muffins are his favorite. Our oldest daughter makes banana bread, quite a bit. J's alwys delivering over ripe bananas to her house. Pretty good hint, he wants her to back more bread!
See, even in a pinch you are the baking queen! I bet they loved them! Hope you enoyed your last minute visit. Often times those spontaneous visits and last minute plans end up being the best ones!
