Muffin recipe...

Hi ladies, here's the cheese and bacon muffin recipe for those who were interested. They are really easy to make, freeze/reheat really well, and are very tasty. I hope you enjoy them as much as we do here at Jacaranda Cottage!

3.5 cups self raising flour
2 teaspoons baking powder
1-2 teaspoons curry powder
4 tablespoons sugar
2 cups grated cheese (I use 1.5 cups tasty and .5 cup Parmesan freshly grated)
1 cup diced bacon (or ham, whatever you like. My mum makes her muffins with hot pastrami and pesto and they are delicious too!)
salt & pepper
2 large eggs
1.5 cups milk
250g melted unsalted butter
1 medium diced onion (or shallots/spring onions)
garlic cloves finely diced (I use 4 large cloves, but you put as much as you like)

Pre-heat oven to 200 C/ 400 F



Sift flour, baking powder, sugar and curry powder into a bowl. Put aside.

In another mixing bowl put bacon, onion, cheese, salt & pepper, and melted butter. With mixer on medium speed, add eggs and mix in. With mixer on low alternatively add dry mix and milk starting and ending with dry mix. Mix until just combined. Do not over mix.



Scoop batter into well greased muffin trays. (Sometimes I bake this in a loaf pan, sometimes I do regular size muffins and sometimes I do those huge texas size muffins. Adjust cooking time depending on what size you do).



Bake for 25 mins (for regular size muffins. Longer for loaf or texas muffins).




Serve warm with fresh hot tea/coffee. I like to eat these as is, but my husband likes to slice them open and slather even more butter onto them. Each to their own....enjoy!


This weekend we aussie's celebrate Father's Day on Sunday. We should be in for a really fun weekend and I hope yours is too!
