The Proud Tradition of Australian Cooking...

Hi Ladies! Thank you for your well wishes for LuLu, she's going great guns now and the cone barely slows her down at all........she misjudges things and goes bouncing off doorways and furniture quite often, but otherwise things are good!

Today I wanted to share with you this awesome book that my Mum gave me recently....The Proud Tradition of Australian Cooking. Mum said when she saw this book she knew it would be perfect for me since I love to cook, I'm very traditional in all things especially my cooking, and I am a very proud Australian.


There are a lot of recipes in this fabulous book, and together my daughter and I are getting through them one by one. Since it's the school holidays here now for 2 weeks, Princess and I decided to make a few batches of ANZAC biscuits (or cookies). They're so delicious and easy to make, so I thought I'd share the recipe with you too......


1 cup rolled oats
1 cup desiccated coconut
1 cup plain flour
1/2 cup white sugar
125g butter
1 tablespoon Golden Syrup
1 level teaspoon bicarb soda
3 tablespoons water

Pre-heat oven to 160c/325F. Lightly grease two baking trays. Place rolled oats, coconut, flour and sugar into a bowl and mix together (I did this in my Kitchen Aid mixer). Gently heat the butter and Golden Syrup in a small saucepan. Mix the bicarb soda with the water, then add to the butter and syrup mix. Remove from the heat. Pour into the bowl of dry ingredients and mix well. Place dessert spoons mounds onto the baking trays and allow for spreading.

Bake for about 20 mins or until golden brown. Leave to cool on trays. Store in an air tight container. Serve with a cup of sweet billy tea (or coffee), settle back and feel like an honourary aussie for the day! lol

So happy tp hear little LuLu is doing so well. She is such a cutie! The cookie recipe looks wonderful. I must make them, my husband loves oatmeal type cookies. Thanks for sharing!!
