Potato Bake:
You will need:
6 large potatoes (sometimes I peel the potatoes, sometimes I don't. Just scrub them clean if you don't peel them)
1 bottle of cream (600mls)
2 packets of Maggi Potato Bake seasoning
1 cup grated cheese
Garlic (we love garlic, so I add 3-4 large cloves)
Sea salt & ground black pepper, to taste
(I sometimes add sliced onion too)
Mix all ingredients together and pour into a large greased baking dish. Cover with foil for first 45 mins, then remove foil and bake uncovered for another 45 mins @ 350 deg USA (180 deg Aussie). During the last 15 mins of baking, sprinkle some more grated cheese over the top to melt & brown(as much or as little as you like).
Here is last night's dinner: Potato bake, honey carrots, peas, and Honey Soy Chicken.
Honey Soy Chicken is a Barefoot Contessa's recipe (Ina Garten). My family like the chicken diced, so I dice 1.5kg of chicken breast, then bake. Very quick & easy....and delicious!
Honey Soy Chicken:
1 cup honey
3/4 cup Soy Sauce
1/4 - 1/2 cup freshly grated ginger(I only use 1/4 cup as we find it too strong other wise)
1/4 cup freshly minced/diced garlic
Mix all ingredients in a small saucepan on med temp until honey melts. Pour over chicken (either diced or whole). Bake @ 350 deg (180 deg) covered with foil for 30 mins, then uncover and cook for another 45 mins. If you have time to let the chicken marinate, then do, if not that's fine, just pop her in the oven and call it good! This dish also freezes and reheats beautifully.
Quiche recipe:
4 eggs
1/2 cup (1 stick, or 125g) melted butter
3/4 cup Self Raising flour
1 1/2 cups milk
salt & pepper
1 onion finely diced
1 cup grated cheese
1 cup bacon or ham finely diced
garlic (I use 3-4 cloves)
You can also add corn or capsicum (I think you call them Peppers in the USA?)
Mix all ingredients together well and pour into a greased pie plate or baking dish. Bake at 350 deg (180 deg Aussie) for an hour or until golden brown. Serve hot, cold or at room temp. Quiche freezes beautifully.
Some of you asked for my pumpkin soup recipe from a couple of posts ago. While I do love to bake and cook, there are times when a girl just has to have the night off. So here is my recipe for pumpkin soup.......I just add a dash of cream or milk and ground black pepper to this as it's heating on the stove. Serve with freshly baked hot bread rolls and top with butter. Snuggle in and enjoy!

p.s. my husband went back to Lowe's and found a cement stain by the maker Quikcrete. It comes in several colors and is transparent. The look I am going for is an old courtyard of real stones/slate that has been there for years. So hopefully by applying several different shades I will be able to get it. When I do it, I will post pictures...
I'm reading this as I'm pre-heating my oven to make...fish sticks! LOL! It's no secret that the kitchen and I aren't on the best of terms, but these recipes inspire me to make friends with the kitchen again! Yummy! Thanks Amanda!!

Good of you to go to the bakery so early. You know what they say: The early (bird) cupcake contessa gets the (worm) sweets.
I am so ready to try the chicken and the potatoes ... little nervous about the pumpkin soup. ha ha. I wonder if we have some similar mix for the potato bake here in America? And I've never seen pumpkin soup here either. So now I must look because I must know if we have it or not! And if we DO have it, I WILL try it. Promise.

I am ready to don an apron and get cooking! Though I think I need to shop for a prettier apron to make all these beautiful dishes! I had no idea you could get pumpkin soup in a can, and those are pretty cans too! I love life's simple pleasures like that. Thank you for sharing those recipes. Do you also make the potato recipe with the hashbrowns and corn flakes? We make that a lot around winter time. It is so warm and cheesey! I used to take it to potlucks when I worked out of the home. Let me know if you want that recipe if it is not already a part of your amazing recipe box! Thanks for posting the yummies. I had to go back and look at the original pictures and drool over how beautiful the table was decorated too! A feast for the eyes. I agree with all the girls..it made me hungry all over again....
