A Sneak Peek!



Good morning! I'm sorry I didn't post yesterday, by day's end I was exhausted from all the Christmas decorating that happened here. I will post more photo's tomorrow, but here's a sneak peek at Christmas.................Aussie style! Today I'm going thrifting, woo hoo!!, but first I'll post the recipe for yesterday's Bacon & Cheese muffins since quite a few asked me to share it. They really are easy to make and taste really, really good.....and the smell is, well....delicious!


Bacon & Cheese Muffins:


3.5 cups Self Raising flour


4 Tablespoons sugar


2 Teaspoons Baking Powder


2 cups grated cheese


1 cup diced bacon


2 large eggs (lightly beaten)


1.5 cups milk


2/3 cup melted butter


1 onion diced


diced garlic (however much you like, I use 3-4 cloves in this)


1 Tablespoon mustard powder


Sea salt & cracked black pepper


You could add some fresh herbs if you'd like, I do sometimes, just didn't have any this time.


Pre-heat oven to 400 Fahrenheit (200 Celsius)


Sift flour, sugar, baking powder & mustard into a large bowl. Add sea salt & cracked black pepper. Stir in bacon, cheese, onion & garlic.


In a small bowl combine cooled melted butter, milk & lightly beaten eggs.


Using a wooden spoon or spatula, combine wet mix to dry mix. Stir gently until just combined. Do not over mix. Spoon mixture into greased muffin pans. Bake 20-25 mins or until golden brown. Makes about 24 regular muffins or 12 large ones. These also freeze well.

Oh, gosh I'm glad to see that recipe...think we'll have them Thanksgiving morning. Thanks for the recipe.
I won't do C. decorating until the day after Thanksgiving.

I wonder what it must be like to celebrate Christmas where it's so hot! We oftentimes have very, very cold temps... even occasional snow. =)
